Salmon, potato, asparagus, broccoli & spring onion tray bake

Ingredients

  • 200g potatoes
  • A dozen asparagus stalks
  • 1 head of broccoli
  • A dozen or so spring onions
  • 4 salmon fillets

For the Yoghurt

  • 200g Greek Yoghurt
  • 1 clove of garlic
  • Juice of half a lemon
  • A few sprigs of chopped parsley

How To Make It

  • Step 1.

    Peel and quarter the potatoes then roast in olive oil for 20 mins at 180.
  • Step 2.

    Cut the woody bits off the asparagus, dehead the broccoli and remove the outer layer of the spring onions.
  • Step 3.

    Add the vegetables to the tray and cook for a further 10 minutes.
  • Step 4.

    Add the salmon with a slice of lemon and cook for a final 10 minutes.
  • Step 5.

    Grate 1 clove of garlic in a bowl and add the juice of half a lemon, the yoghurt and chopped parsley. Mix well.
  • Step 6.

    Remove the tray from the oven, pureeing some (with the yoghurt) for baby if required.
