Salmon, potato, asparagus, broccoli & spring onion tray bake

Ingredients
- 200g potatoes
- A dozen asparagus stalks
- 1 head of broccoli
- A dozen or so spring onions
- 4 salmon fillets
For the Yoghurt
- 200g Greek Yoghurt
- 1 clove of garlic
- Juice of half a lemon
- A few sprigs of chopped parsley
How To Make It
Step 1.
Peel and quarter the potatoes then roast in olive oil for 20 mins at 180.Step 2.
Cut the woody bits off the asparagus, dehead the broccoli and remove the outer layer of the spring onions.Step 3.
Add the vegetables to the tray and cook for a further 10 minutes.Step 4.
Add the salmon with a slice of lemon and cook for a final 10 minutes.Step 5.
Grate 1 clove of garlic in a bowl and add the juice of half a lemon, the yoghurt and chopped parsley. Mix well.Step 6.
Remove the tray from the oven, pureeing some (with the yoghurt) for baby if required.
