Salmon, Chorizo and Cannellini Bean Traybake
I just love the colours in this dish, like a late summer fiery sunset. So simple to put together and containing some great superfoods like salmon, spinach, tomato and cannellini bean, this is a really healthy midweek bake.

Ingredients
- 300g chopped chorizo
- 1 onion, diced
- 200g cherry tomatoes
- 2 x 400g cannellini beans
- Olive oil, salt
- 2 handfuls of spinach
- 3-4 salmon fillets
- Juice of 1 lemon
How To Make It
Step 1.
Heat the oven to 180. Mix together the chopped chorizo, onion, cherry tomatoes and cannellini beans, drained and rinsed. Add a splash of olive oil and a pinch of salt then empty into an oven dish. Cook at 180 for 15 mins.Step 2.
Remove and add the spinach to the tray. Stir then place the salmon fillets on top then add a squeeze of lemon.Step 3.
Return to the oven for 12 mins then serve. That's it! No need for any additional spices as the flavour from the chorizo and salmon permeates everything.
