Red Pepper, cheese and spinach muffins

Waaaah have you seen this recipe for red pepper, spinach and cheese muffins? Another great after-school snack, pram snack for babe or just something fun to make! I love how colourful these go all good to be frozen too and best enjoyed with warm butter.

Ingredients

  • 3 Red peppers
  • 100g fresh spinach
  • 200g grated cheese (cheddar, red Leicester, gouda etc.)
  • 3 eggs
  • 50ml milk
  • 50ml olive oil
  • 300g wholemeal self-raising flour
  • 2 teaspoons baking powder

How To Make It

  • Step 1.

    Heat the oven to 180. Dice the red peppers and chop the spinach.
  • Step 2.

    Add 200g grated cheddar/red Leicester/whatever, 3 eggs, 50ml milk, 50ml olive oil and mix well.
  • Step 3.

    Then sieve over 300g wholemeal self raising flour plus 2 teaspoons baking powder.
  • Step 4.

    Mix, put in greased muffin trays and bake for 20-25 mins at 180.
