Mango, halloumi, avocado and cucumber salad

Ready in minutes this is a great summer salad and as it’s so quick you don’t lose crucial sunbathing time! (or being splashed repeatedly in the face by your toddler from the paddling pool).

  • 1 cucumber
  • 2 avocadoes
  • 1 x 250g pack of halloumi
  • 2 large mangos
  • Fresh rosemary
  • 1 lemon
  • Olive oil

How To Make It

  • Step 1.

    Slice the halloumi and grill for a few minutes a side. Remove and allow to cool slightly.
  • Step 2.

    Chop the cucumber and place in a bowl.
  • Step 3.

    Peel and slice the avocado then squeeze the juice of half a lemon over it to stop it browning
  • Step 4.

    Dice the mango and add to the bowl along with the avocado
  • Step 5.

    Tear up the halloumi and add to the boel along with some ripped fresh rosemary sprigs, the juice from the remaining lemon and a splash of olive oil
