Mango, halloumi, avocado and cucumber salad
Ready in minutes this is a great summer salad and as it’s so quick you don’t lose crucial sunbathing time! (or being splashed repeatedly in the face by your toddler from the paddling pool).

Ingredients
- 1 cucumber
- 2 avocadoes
- 1 x 250g pack of halloumi
- 2 large mangos
- Fresh rosemary
- 1 lemon
- Olive oil
How To Make It
Step 1.
Slice the halloumi and grill for a few minutes a side. Remove and allow to cool slightly.Step 2.
Chop the cucumber and place in a bowl.Step 3.
Peel and slice the avocado then squeeze the juice of half a lemon over it to stop it browningStep 4.
Dice the mango and add to the bowl along with the avocadoStep 5.
Tear up the halloumi and add to the boel along with some ripped fresh rosemary sprigs, the juice from the remaining lemon and a splash of olive oil
