Huevos Rancheros

A gorgeous brunch dish perfect for the weekend, I love the combination of cooked beans, fresh tomato and avocado and runny egg.

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1 red chilli
  • 1 x 400g can of black beans
  • Juice of 2 limes
  • 1 tortilla per person
  • 2 tomatoes
  • 1 diced avocado
  • Chopped coriander
  • 1 egg per serving

How To Make It

  • Step 1.

    Dice an onion, 2 cloves of garlic and a red chilli or 2 then fry in some olive oil in a pan with a pinch of salt.
  • Step 2.

    After 3 mins add a can of black beans (or kidney beans if you can't get them), 100ml water and the juice of 1 lime.
  • Step 3.

    Cook for a further 5 mins then use a fork or spoon to gently mash the mixture. These are your refried beans.
  • Step 4.

    Place the beans on a tortilla. Dice 2 tomatoes and mix together with a diced avocado, juice of another lime, chopped coriander and another chopped chilli (if you want). Add a pinch of salt then place on top of the beans.
  • Step 5.

    Fry an egg or two, place on top and garnish with coriander. Yum!
