Huevos Rancheros
A gorgeous brunch dish perfect for the weekend, I love the combination of cooked beans, fresh tomato and avocado and runny egg.

Ingredients
- 1 onion
- 2 cloves of garlic
- 1 red chilli
- 1 x 400g can of black beans
- Juice of 2 limes
- 1 tortilla per person
- 2 tomatoes
- 1 diced avocado
- Chopped coriander
- 1 egg per serving
How To Make It
Step 1.
Dice an onion, 2 cloves of garlic and a red chilli or 2 then fry in some olive oil in a pan with a pinch of salt.Step 2.
After 3 mins add a can of black beans (or kidney beans if you can't get them), 100ml water and the juice of 1 lime.Step 3.
Cook for a further 5 mins then use a fork or spoon to gently mash the mixture. These are your refried beans.Step 4.
Place the beans on a tortilla. Dice 2 tomatoes and mix together with a diced avocado, juice of another lime, chopped coriander and another chopped chilli (if you want). Add a pinch of salt then place on top of the beans.Step 5.
Fry an egg or two, place on top and garnish with coriander. Yum!
