Courgette and Cheese Wholemeal Loaf

Delicious and best eaten warm from the oven with some butter on top! A great way of sneaking in some veggies for the little ones.

Ingredients

  • 225g wholemeal flour
  • 3 teaspoons baking powder
  • 2 courgettes, grated
  • 200g cheddar cheese, grated
  • 3 eggs
  • 3 tablespoons of milk
  • Half a teaspoon of cayenne pepper
  • Pinch of salt
  • 75g butter

How To Make It

  • Step 1.

    Melt the butter, allow to cool and whisk in the eggs and milk.
  • Step 2.

    Sieve the flour and baking powder in a separate bowl and add the courgette, cheese, cayenne pepper and salt.
  • Step 3.

    Pour the egg mix into the bowl and mix well with a spoon (don’t whisk).
  • Step 4.

    Line a bread tin with baking paper, pour the mix in then cook at 160 for around 45 minutes.
