Beetroot Fried Rice

I love the colours of this dish, especially the pinky-red rice from the beetroot Such a great way of increasing your vitamin intake.

Ingredients

  • 200g Store bought cooked beetroot, cubed
  • 2 diced garlic clove
  • 3 teaspoon of sesame oil
  • 200g cooked wholegrain rice
  • 1 red pepper, chopped
  • 8-10 asparagus spear
  • 50g mange tout
  • 1 x 5cm peeled and grated ginger
  • 1 tablespoon of soy sauce

How To Make It

  • Step 1.

    Fry the beetroot in a teaspoon of sesame oil and one of the garlic cloves. Add the cooked rice and cook for 5 minutes so the rice takes on this lovely pink colour. Take off the heat.
  • Step 2.

    In a separate pan heat the remaining sesame oil and fry the red pepper, asparagus and mage tout for 3-4 minutes. Add the soy sauce, ginger and remaining garlic clove and mix well.
  • Step 3.

    Serve the vegetables on top of the beetroot rice, adding hot sauce if required!
