Roasted haddock, cannelini bean, chorizo, courgette & carrot

Ingredients

  • 4 Haddock fillets
  • 1 lemon
  • 1 onion
  • 2 carrots
  • 1 courgette
  • 2 chorizo sausages
  • 100ml vegetable stock
  • A spalsh of milk
  • 1 x 400g can of cannellini beans
  • Chopped Parsley

How To Make It

  • Step 1.

    Pop some haddock on a few slices of lemon in a baking tray and roast for 12 minutes at 180.
  • Step 2.

    Dice an onion, carrot and courgette and cook in a splash of oil.
  • Step 3.

    Add 2 diced chorizo, 100ml vegetable stock and a splash of milk.
  • Step 4.

    Cook for a few minutes until most of the liquid is absorbed.
  • Step 5.

    Stir through a drained can of cannellini beans.
  • Step 6.

    Plate up, fish on top, add some chopped parsley. Full of healthy good stuff!
