Throw everything chicken and veg pasta

A throw everything together left in the fridge meal here but boy did it taste good. Cheap and cheerful and totally family-friendly.

Ingredients

  • 2-3 chicken breasts
  • 1 onion
  • 2 cloves of garlic
  • 100g frozen peas
  • 1 courgette
  • 1 green pepper
  • 300ml passata
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon paprika
  • 100ml chicken stock
  • 300g pasta such as penne or fusilli
  • Parmesan for topping

How To Make It

  • Step 1.

    Dice the chicken and cook for 5 minutes in a pan, then set aside.
  • Step 2.

    Put the pasta on to boil.
  • Step 3.

    Dice an onion and cook for a few minutes then add the crushed garlic and dried herbs.
  • Step 4.

    Dice the courgette and pepper and add to the pan along with the peas.
  • Step 5.

    Add the passata, the cooked chicken and stock and simmer for around 10 minutes
  • Step 6.

    Mix in the cooked pasta then top with parmesan
