Sausage, kale & vegetable pasta with tomato & garlic sauce

Sausage and pasta, a match made in heaven when it comes to family food? Absolutely. Add in some secret veg and you’re onto a winner of a dish.

Ingredients

  • 6-8 good quality sausages
  • 1 onion
  • 2 cloves of garlic
  • 1 courgette
  • 2 carrots
  • 8-10 mushrooms
  • 1 x 400g can of chopped tomatoes
  • 360g pasta
  • 150g kale
  • 100g grated cheese

How To Make It

  • Step 1.

    First of all fry the sausages in a pan for 6-8 minutes, remove and cut into bite sized pieces.
  • Step 2.

    Drain any excess fat from the pan then dice up and cook an onion for 3 minutes.
  • Step 3.

    Put the pasta on to boil
  • Step 4.

    Add 2 chopped cloves of garlic, diced courgette, carrots and sliced mushrooms.
  • Step 5.

    Add the sausages back in then add the tomatoes.
  • Step 6.

    Dice up some kale, remove the woody bites and add to the pan.
  • Step 7.

    Cook for a further 5 minutes then serve with a little grated cheese. Delicious!
