Ingredients
- 200g peas
- 2 knobs of butter
- A few sprigs of mint
- 3-4 slices of Parma Ham
- 8-12 scallops

- Olive oil
How To Make It
Step 1.
Combine the butter and peas in a food processor along with the mint and a pinch of salt and pepper. Whizz until smooth then set aside.Step 2.
Fold each slice of parma ham until you have a little square-sized pillow. Heat a splash of olive oil in a pan and cook the ham for a minute a side. Remove from the pan.Step 3.
Add the remaining knob of butter to the pan then cook the scallops for 2 minutes as side.Step 4.
Place the puree on a plate, top with the Parma Ham, a scallop and drizzle a little sauce from the pan over the top. This dish also works delightfully with a roasted butternut squash puree.
Serve & Enjoy

Peas are packed with so much goodness they’re really my favourite superfood vegetable. Scallops too are little balls of protein with zero fat on them making this a not only delicious but healthy meal.
