Parma Ham, Pea and Mint Puree and Caramelised Scallops

A decadent dish for a special occasion (or not!) this really is such a treat. Juicy scallops, salty parma ham and sweet peas all coming together on the plate.

Ingredients

  • 200g peas
  • 2 knobs of butter
  • A few sprigs of mint
  • 3-4 slices of Parma Ham
  • 8-12 scallops
  • Salt and black pepper
  • Olive oil

How To Make It

  • Step 1.

    Combine the butter and peas in a food processor along with the mint and a pinch of salt and pepper. Whizz until smooth then set aside.
  • Step 2.

    Fold each slice of parma ham until you have a little square-sized pillow. Heat a splash of olive oil in a pan and cook the ham for a minute a side. Remove from the pan.
  • Step 3.

    Add the remaining knob of butter to the pan then cook the scallops for 2 minutes as side.
  • Step 4.

    Place the puree on a plate, top with the Parma Ham, a scallop and drizzle a little sauce from the pan over the top. This dish also works delightfully with a roasted butternut squash puree.

Peas are packed with so much goodness they’re really my favourite superfood vegetable. Scallops too are little balls of protein with zero fat on them making this a not only delicious but healthy meal.
