Orzo, Chicken, leek, mushroom and bacon one pot

An easy one pot dish with minimal effort ready in no time, what’s not to like? Orzo has been such a revelation to me recently, and my kids love it.

Ingredients

  • 3-4 chicken breasts
  • 2 leeks
  • 1 knob of butter
  • 2 crushed garlic cloves
  • A dozen or so sliced mushrooms
  • A dozen or so sliced mushrooms
  • A few sprigs of fresh thyme
  • 400g orzo
  • 900ml chicken stock
  • Parmesan for grating

How To Make It

  • Step 1.

    Dice the chicken breasts and brown in a pan then remove.
  • Step 2.

    Slice the leeks, rinse and sweat down with a knob of butter for 5 mins. Add 2 crushed garlic cloves, the sliced mushrooms, chopped bacon and cook for a few mins.
  • Step 3.

    Then add the chicken back in and some fresh or dried thyme. Mix well.
  • Step 4.

    Add the orzo and mix well, then pour over the stock and cook for 20 mins until the liquid is absorbed. Serve with some parmesan on top.
