Orzo, Chicken, leek, mushroom and bacon one pot
An easy one pot dish with minimal effort ready in no time, what’s not to like? Orzo has been such a revelation to me recently, and my kids love it.

Ingredients
- 3-4 chicken breasts
- 2 leeks
- 1 knob of butter
- 2 crushed garlic cloves
- A dozen or so sliced mushrooms
- A dozen or so sliced mushrooms
- A few sprigs of fresh thyme
- 400g orzo
- 900ml chicken stock
- Parmesan for grating
How To Make It
Step 1.
Dice the chicken breasts and brown in a pan then remove.Step 2.
Slice the leeks, rinse and sweat down with a knob of butter for 5 mins. Add 2 crushed garlic cloves, the sliced mushrooms, chopped bacon and cook for a few mins.Step 3.
Then add the chicken back in and some fresh or dried thyme. Mix well.Step 4.
Add the orzo and mix well, then pour over the stock and cook for 20 mins until the liquid is absorbed. Serve with some parmesan on top.
