  • 300g Gemelli pasta (or penne, fusilli etc)
  • 8 slices of salami
  • 1 ball of mozzarella
  • 80g cherry tomatoes, quartered
  • 80g black olives
  • 1 red pepper, diced
  • half a cucumber, diced
  • 1 red onion, chopped

  • 3 tablespoons of olive oil
  • 1 clove of garlic, grated
  • 1 tablespoon of red wine vinegar
  • 30g grated parmesan
  • juice of half a lemon
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Fresh basil

How To Make It

  • Step 1.

Cook the pasta as per packet instructions. You want it al dente. Remove from the heat and drain. Add a splash of olive oil to stop it sticking
  • Step 2.

Thickly chop the salami and mozzarella and add to a bowl alongside the pepper, cucumber, olives, onion and tomatoes
  • Step 3.

When cooled, add the pasta to the bowl.
  • Step 4.

Assemble the dressing and mix into the salad. Top with fresh basil

Serve & Enjoy
