Italian Summer Salad
I love this Italian pasta salad, full of all the amazing flavours of Italy. So simple to make and brilliant as a meal itself or to complete a bbq

Ingredients
- 300g Gemelli pasta (or penne, fusilli etc)
- 8 slices of salami
- 1 ball of mozzarella
- 80g cherry tomatoes, quartered
- 80g black olives
- 1 red pepper, diced
- half a cucumber, diced
- 1 red onion, chopped
Dressing
- 3 tablespoons of olive oil
- 1 clove of garlic, grated
- 1 tablespoon of red wine vinegar
- 30g grated parmesan
- juice of half a lemon
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Fresh basil
How To Make It
Step 1.
Cook the pasta as per packet instructions. You want it al dente. Remove from the heat and drain. Add a splash of olive oil to stop it stickingStep 2.
Thickly chop the salami and mozzarella and add to a bowl alongside the pepper, cucumber, olives, onion and tomatoesStep 3.
When cooled, add the pasta to the bowl.Step 4.
Assemble the dressing and mix into the salad. Top with fresh basil
