Chickpea, Chorizo and Feta Salad
A super easy and tasty salad perfect for a family bbq side or a main meal. Ready in under 10 mins this salad plays with different textures, tastes and is salty, sweet, bitter, crunchy, smooth and everything else in between!
- 260g Chorizo
- 2 x 400g can of chickpeas
- 3-4 spring onions
- 1x 250g block of feta
- 4 handfuls of rocket
- 200g cherry or sun-dried tomatoes, chopped
- 2 tablespoons of olive oil
- 1 teaspoon of red wine vinegar
- Juice of 1 lemon
- 1 grated clove of garlic
- Splash of honey (optional)
How To Make It
Step 1.Take the chorizo, slice then quarter then dry fry for 3-4 minutes, discard the oil and rest the chorizo on kitchen paper.
Step 2.Take 2 cans of chickpeas and mix with 3-4 sliced spring onions, a crumbled block of feta and the rocket. Add the chorizo. Throw in some tomatoes or sun-dried tomatoes if you have some, if not no biggie.
Step 3.For the dressing mix 2 tablespoons of olive oil, a teaspoon of red wine vinegar, juice of 1 lemon and a grated clove of garlic. Add a splash of honey if you want to sweeten it a bit.
Serve & Enjoy
The chickpeas are a great source of fibre and protein whilst you’ll get a great calcium boost from the feta.
