Chicken, sweet potato and chorizo mash

That's right, sweet potato and chorizo mash. This is lick the plate clean good, I'm using chicken legs as I had some in the freezer but breast or thigh is fine too.

Ingredients

  • 2 chicken legs (or breasts or 4-6 chicken thighs)
  • 100ml chicken stock
  • 3-4 sweet potatoes
  • 2 chorizo sausages
  • Fresh parsley
  • 1 onion
  • 2 garlic cloves
  • 6 mushrooms
  • 1 spoonful of flour

How To Make It

  • Step 1.

    For the chicken fry skin side down for 15 mins until you get this lovely caramel colour then flip it over, pour in 100ml stock and cook for another 20 mins or so until cooked. Using the stock keeps it nice and moist.
  • Step 2.

    Whilst that's cooking, peel and slice the sweet potatoes, boil for 5-7 minutes then mash.
  • Step 3.

    Slice 2 chorizo sausages and fry in a pan for 5 minutes. Dice then add to the mash along with a handful of diced parsley.
  • Step 4.

    Remove the chicken from the pan and set aside to rest. Keep the stock in a bowl.
  • Step 5.

    In a pan fry an onion, garlic and some mushrooms. Remove then add the stock to the pan along with a spoonful of flour. Mix well then pour add the mushrooms back in. Badaboom.
