Chicken, Orzo and Vegetable Broth

A big bowl of comfort broth for when the weather is rubbish, someone has a cold or just you’re in need of some comfort food!

  • 1 kg combination of chicken thighs, legs, drumsticks
  • 1 onion
  • 3 cloves of garlic
  • 1 tablespoon dried sage or a handful of fresh sage leaves
  • 1 dozen mushrooms
  • 300g orzo
  • 1 knob of butter
  • 800ml chicken stock
  • 1 lemon
  • 1 head of broccoli
  • 4 rashers of bacon
  • A splash of cream

How To Make It

  • Step 1.

    Take around 1kg of chicken thighs, legs and drumsticks and brown them in a pan then remove. Dice an onion and cook for 3-4 mins in the same pot before adding in 3 cloves of crushed garlic. Add in some shredded fresh sage or a tablespoon of dried sage.
  • Step 2.

    Cook all together then thickly slice a dozen mushrooms and add to the pot. Pour in around 300g orzo and a knob of butter and mix well.
  • Step 3.

    Finally pour over 800ml chicken stick and the juice of one lemon and let bubble away for 40 mins until the chicken is cooked.
  • Step 4.

    About halfway through cooking add in some broccoli florets. Add In some bacon if you have any and a splash of cream would go down really well too.
