Chicken & Asparagus Chowder

So this is a gorgeous little dish full of flavour. Along with the chicken and asparagus there's potato, celery and onion in there too so its full of great nutrients too. In fact it's a great dish to chuck lots of veg into and if you're veggie just leave out the chicken.

Ingredients

  • 2 chicken breasts
  • 1 onion
  • 1 knob of butter
  • A few sticks of celery
  • 2 large potatoes
  • 500ml stock
  • 2 tablespoons of flour
  • A dozen asparagus spears
  • 100ml single cream (or cashew cream)
  • Fresh parsley to garnish

How To Make It

  • Step 1.

    Dice 2 chicken breasts and cook in a little vegetable oil for a few minutes until cooked. Set aside.
  • Step 2.

    Dice an onion and fry in a knob of butter, then add a few sticks of chopped celery.
  • Step 3.

    Peel 2 medium/large potatoes, dish and add to the pan along with the chicken. Cook for another 2 mins.
  • Step 4.

    Whisk together 500ml stock and two tablespoons of flour (any). Pour into the pan and simmer for 10 mins until the potato is almost cooked.
  • Step 5.

    Chop up a dozen or so asparagus spears (removing the woody bits) and cook for 3-4 mins. Mix in around 100ml single cream (or cashew cream) then serve in a bowl. Puree for baby or roughly mash for littler ones. Garnish with parsley.
