Broccoli Bread

A super easy, delicious and nutritious bake perfect for pram snacks, lunch on the go or a healthy snack. These are a great way of getting in some healthy greens! Make loads for the freezer.

Ingredients

Bread

  • 2 Heads of broccoli, cut into florets
  • 100g grated chedar
  • 2 eggs
  • 2 tablespoons of self-raising wholegrain flour

How To Make It

  • Step 1.

    Set the oven to 180C. Boil the broccoli florets in a pan of boiling water for 3-4 minutes then drain.
  • Step 2.

    Blend the cooked florets in a food processor and then squeeze the water out of the broccoli. This is a really important step otherwise the bread won’t form.
  • Step 3.

    Place the broccoli in a bowl and add the cheddar and eggs. Mix well then add the flour and mix again.
  • Step 4.

    Shape the mixture into 6-8 discs, place on baking paper and cook for 20 minutes. Allow to cool before eating.

Broccoli is a great source of lots of different vitamins plus calcium, fibre and iron too. There’s some good protein and calcium from the eggs and cheese as well.
