Broccoli Bread

Ingredients
Bread
- 2 Heads of broccoli, cut into florets
- 100g grated chedar
- 2 eggs
- 2 tablespoons of self-raising wholegrain flour
How To Make It
Step 1.
Set the oven to 180C. Boil the broccoli florets in a pan of boiling water for 3-4 minutes then drain.Step 2.
Blend the cooked florets in a food processor and then squeeze the water out of the broccoli. This is a really important step otherwise the bread won’t form.Step 3.
Place the broccoli in a bowl and add the cheddar and eggs. Mix well then add the flour and mix again.Step 4.
Shape the mixture into 6-8 discs, place on baking paper and cook for 20 minutes. Allow to cool before eating.

Broccoli is a great source of lots of different vitamins plus calcium, fibre and iron too. There’s some good protein and calcium from the eggs and cheese as well.
