Turmeric and garlic chicken kebabs, charred peppers, brown rice and turmeric dipping yoghurt

A gorgeous grilled chicken recipe perfect for having on the bbq (or inside on the grill if it’s cold outside!) (plus 30 mins chilling time)

Ingredients

  • 2 chicken breasts
  • 100g Greek Yoghurt
  • Two tablespoons of turmeric
  • Two tablespoons of turmeric
  • 2-3 red or green peppers
  • Brown rice to serve

How To Make It

  • Step 1.

    Cut up two chicken breasts into 3 strips and mix in with 100g or so of Greek yoghurt and two tablespoons of turmeric.
  • Step 2.

    Dice a clove of garlic, mix it in and leave to chill in the fridge for 30 mins or so.
  • Step 3.

    Place on skewers and grill for 8-10 minutes a side. If you don't have skewers just grill the chicken as it is.
  • Step 4.

    Quarter a few peppers, sprinkle with salt and brush with olive oil and fry or griddle for a few minutes a side until blistered. Serve with brown rice.

Nutritional Info

Peppers are full of vitamins, fibre, iron, potassium and more. Adding turmeric to the yoghurt is a great way of boosting the vitamin content too.
