Spicy Grapefruit Salsa, Roast Salmon and Coriander Wholegrain Rice
The spicy grapefruit salsa adds a real citrus zing to a gorgeous piece of fish. If grapefruit isn’t your thing swap it out for mango or papaya.

Ingredients
- 2 Salmon Fillets
- 200g Wholegrain Rice
For the Salsa
- 1 grapefruit, cut into small pieces
- 1 large bunch of coriander
- 1 chopped tomato
- 1 chopped green chilli
- 1 diced shallot
- 1 teaspoon of vinegar
- 2 limes
- Salt
How To Make It
Step 1.
Assemble the salsa by combining the ingredients. Hold back 1 of the limes and half of the coriander. Refrigerate the salsa until you need it.Step 2.
Cook the rice as per packet instructions. Chop the remaining coriander then stir through the cooked, drained rice.Step 3.
Heat the oven to 180. Slice the remaining lime into slices, arrange half on a baking tray and place the salmon on top. Squeeze the remaining lime over the top of the fish and cook for 12 minutes.
