Spicy Grapefruit Salsa, Roast Salmon and Coriander Wholegrain Rice

The spicy grapefruit salsa adds a real citrus zing to a gorgeous piece of fish. If grapefruit isn’t your thing swap it out for mango or papaya.

Ingredients

  • 2 Salmon Fillets
  • 200g Wholegrain Rice

For the Salsa

  • 1 grapefruit, cut into small pieces
  • 1 large bunch of coriander
  • 1 chopped tomato
  • 1 chopped green chilli
  • 1 diced shallot
  • 1 teaspoon of vinegar
  • 2 limes
  • Salt

How To Make It

  • Step 1.

    Assemble the salsa by combining the ingredients. Hold back 1 of the limes and half of the coriander. Refrigerate the salsa until you need it.
  • Step 2.

    Cook the rice as per packet instructions. Chop the remaining coriander then stir through the cooked, drained rice.
  • Step 3.

    Heat the oven to 180. Slice the remaining lime into slices, arrange half on a baking tray and place the salmon on top. Squeeze the remaining lime over the top of the fish and cook for 12 minutes.
