Spicy Chilli Salmon Ramen
You can’t beat a spicy ramen and topped with chunky salmon this is an unbeatable dish in my opinion.

Ingredients
- 2 salmon steaks
- 1 onion
- A few baby pieces of sweetcorn
- 1 handful of mushrooms
- 1 large handful of frozen peas
- A few pieces of broccoli
- 500ml vegetable stock
- 2 nests of wholegrain noodles
- 2 large teaspoons miso paste
For the Marinade
- 3 teaspoons soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon hot sauce/sriracha
- 1 teaspoon honey
How To Make It
Step 1.
Mix the marinade together, place the salmon on a baking tray and pour half of the marinade over the two salmon steaks. Roast for 12 minutes at 180.Step 2.
Bring the stock to the boil and add the miso and the rest of the marinade. Dice the onion, slice the sweetcorn, mushrooms and broccoli and add to the bowl. Add the peas.Step 3.
Cook the noodles separately then drain and place in two large soup bowls. Remove the salmon from the oven, break up and place on the noodles then add the broth and vegetables. Easy!
