Spiced chicken, fried vegetables and cous cous

A quick and easy dish that’s either great for the family or as a cheeky date night dish when the kids are in bed.

Ingredients

  • 1 chicken breast
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground coriander
  • Juice of 1 lemon
  • 1 onion
  • 1 clove of garlic
  • 1 red pepper
  • 60g mange tout
  • 1 courgette
  • 200g cous cous
  • Enough chicken stock as the cous cous requires (see packet instructions)
  • Fresh coriander for garnish

How To Make It

  • Step 1.

    Take a chicken breast, wrap it in cling film and give it a bash until its roughly twice as wide.
  • Step 2.

    Rub a mixture of a teaspoon of cumin, turmeric, coriander and lemon juice plus a spoonful of olive oil. Cook in the oven for 15 mins at 180.
  • Step 3.

    Dice an onion, a clove of garlic, a pepper, some mange tout and a courgette. Cook the onions for 3 mins in some olive oil then add each ingredient at 2 min intervals.
  • Step 4.

    Cook your cous cous per packet instructions but use chicken stock instead of water.
  • Step 5.

    Drain the cous cous, mix in the vegetables then slice the chicken and arrange on top. Garnish with fresh coriander
