Sausage, cheesy rice and hidden veg
A great family dish full of hidden vegetables, another meal best served after a cold day outside! Freezes well too.

Ingredients
- 6-8 sausages
- 1 onion
- 2 cloves of garlic
- 2 carrots
- 1 courgette
- 1 tablespoon of dried basil
- 1 tablespoon of dried oregano
- 700ml passata
- 400ml chicken stock
- Half a head of broccoli, cut into small florets
- 300g brown rice
- 100g grated cheddar
- Fresh parsley for garnish
How To Make It
Step 1.
Fry the sausages for 5-6 minutes in a pan then remove. Dice an onion, 2 cloves of garlic, a few carrots and a courgette.Step 2.
Fry the onions, add a tablespoon of dried oregano and basil then add the garlic, carrots and courgette.Step 3.
Add the sausages, a 700ml bottle of passata and 400ml stock. Add some diced broccoli and 300g brown rice, uncooked.Step 4.
Cover and leave to cook for 20 mins, but keep checking as you may need to top up with boiling water for the rice. Chop the sausages if you prefer. Add grated cheese and some parsley and watch them inhale.
