Salmon Quesadillas

A great family-friendly snack or light meal this is another dish to get the kids involved with. For little fingers use a pizza cutter to cut into slices when cooked.

Ingredients

  • 2 salmon fillets
  • 1 onion
  • 1 teaspoon of paprika
  • 1 teaspoon of oregano
  • 1 teaspoon of cumin
  • 1 teaspoon of ground coriander
  • 1 diced chilli
  • 1 diced red pepper
  • 100g sweetcorn
  • 100g kidney beans
  • 4 tortillas
  • 200g fresh mozzarella
  • 1 avocado

How To Make It

  • Step 1.

    First up take 2 salmon fillets and roast them for 10-12 minutes at 180 in the oven.
  • Step 2.

    Dice an onion and cook it up along with a teaspoon each of paprika, oregano, cumin and coriander. Add a diced chilli if you want and a diced pepper.
  • Step 3.

    Cook for another few minutes along with a splash of water then add a few handfuls of sweetcorn and kidney beans.
  • Step 4.

    Cook for 2 mins then lightly press down on the mix with a fork or spoon to crush it.
  • Step 5.

    Remove the salmon from the oven and shred with a fork.
  • Step 6.

    Take a tortilla and spread some of the mix over half of it. Top with some salmon, a little sliced mozzarella and some smashed avocado if you want.
  • Step 7.

    Fold the tortilla and cook in a pan for 2-3 mins a side.
