- 4 Haddock fillets
- 1 lemon
- 1 onion
- 2 carrots
- 1 courgette
- 2 chorizo sausages
- 100ml vegetable stock
- A spalsh of milk
- 1 x 400g can of cannellini beans
- Chopped Parsley
How To Make It
Step 1.Pop some haddock on a few slices of lemon in a baking tray and roast for 12 minutes at 180.
Step 2.Dice an onion, carrot and courgette and cook in a splash of oil.
Step 3.Add 2 diced chorizo, 100ml vegetable stock and a splash of milk.
Step 4.Cook for a few minutes until most of the liquid is absorbed.
Step 5.Stir through a drained can of cannellini beans.
Step 6.Plate up, fish on top, add some chopped parsley. Full of healthy good stuff!
