Roasted haddock, cannelini bean, chorizo, courgette & carrot

Ingredients
- 4 Haddock fillets
- 1 lemon
- 1 onion
- 2 carrots
- 1 courgette
- 2 chorizo sausages
- 100ml vegetable stock
- A spalsh of milk
- 1 x 400g can of cannellini beans
- Chopped Parsley
How To Make It
Step 1.
Pop some haddock on a few slices of lemon in a baking tray and roast for 12 minutes at 180.Step 2.
Dice an onion, carrot and courgette and cook in a splash of oil.Step 3.
Add 2 diced chorizo, 100ml vegetable stock and a splash of milk.Step 4.
Cook for a few minutes until most of the liquid is absorbed.Step 5.
Stir through a drained can of cannellini beans.Step 6.
Plate up, fish on top, add some chopped parsley. Full of healthy good stuff!
