Ras el hanout and Yoghurt Grilled Chicken, Za’atar roasted New Potatoes and Grilled Broccoli

Lots of fantastic spices going on here, Za’atar is just heaven on roast potatoes and the Ras el hanout really goes well with the chicken

Ingredients

  • 2 chicken breasts
  • 100g Greek Yoghurt
  • Half a lemon
  • 2 tablespoons of Ras el hanout spice blend
  • 400g new potatoes
  • 4 cloves of garlic
  • 1 onion, quartered
  • 2 tablespoons of Za’atar spice blend
  • 100g cherry tomatoes
  • 160g broccoli
  • Olive oil
  • Salt

How To Make It

  • Step 1.

    Slice the chicken into strips and place in a bowl. Add the yoghurt, juice of half a lemon and Ras el hanout. Mix well and refrigerate until needed.
  • Step 2.

    Heat the oven to 200 degrees. Place the potatoes in a baking tray and add the onion, garlic, Za’atar, a splash of olive oil and a sprinkling of salt. Roast for 40 minutes. After 20 minutes add the tomatoes.
  • Step 3.

    Grill the chicken in a grill pan for 5 minutes a side.
  • Step 4.

    Bring a pan of water to the boil, season and cook the broccoli for 3 minutes before serving.
