Patatas Bravas

I love a plate of Bravas, preferably served with an ice cold drink looking over the ocean, but if that’s not possible then they also taste pretty great at home too! Dial down the spice if you have younger kids or just let the have the potatoes.

Ingredients

  • 400g new potatoes
  • 1 onion, diced
  • 2 garlic cloves, diced
  • 1 red chilli, sliced
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne pepper
  • 1 can of chopped tomatoes
  • 200g chorizo, chopped into large slices
  • A handful of fresh parsley, chopped

How To Make It

  • Step 1.

    Steam the potatoes over a pan of boiling water for around 10 minutes then set aside.
  • Step 2.

    As the potatoes are steaming, cook the onion in a splash of olive oil and a pinch of salt for 3-4 minutes. Add the garlic, chilli, paprika and cayenne pepper and stir well.
  • Step 3.

    Pour over a can of chopped tomatoes, bring to a simmer then cook for 10 minutes to reduce the sauce down.
  • Step 4.

    Fry the chorizo in a pan (you don’t need to add any oil) for 5 minutes. Add the potatoes to the pan and stir well so the potatoes take on some flavour and colour from the chorizo.
  • Step 5.

    Remove from the heat, stir in the reduced tomato sauce and top with the parsley
