Miso French onion soup with goats cheese

A fabulous way of using up onions, plus the umami taste from the miso goes so well in this soup! Top with some lovely goats cheese for extra decadence.

Ingredients

  • 6-8 white onions minimum
  • 1 knob of butter
  • 200ml white wine
  • 400ml chicken stock
  • 1 tablespoon soy sauce
  • Two tablespoons miso paste
  • A few slices of bread
  • A few slices of goats cheese

How To Make It

  • Step 1.

    So to get started slice as many onions as you have lying around (6-8 minimum).
  • Step 2.

    Cook with a knob of butter and some salt for around 10 mins until they start to caramelize and turn brown.
  • Step 3.

    Pour over 200ml white wine, 400ml chicken stock, 1 tablespoon of soy sauce and two tablespoons of miso paste.
  • Step 4.

    Cover and simmer for 20 mins whilst you grill a few slices of goats cheese on toast.
