Lamb Koftas, Tzatziki and Brown Rice with Pomegranate and Mint topped Yoghurt

These baby-friendly lamb koftas are a real treat and a great way of introducing baby to some different spices and textures. If you don’t want to serve them with rice they would taste great in some pitta bread too. Make loads and keep them in the freezer too.

Ingredients

  • 2 red peppers, deseeded, cored and diced
  • 1 shallot, diced
  • 3 cloves of garlic, crushed and diced
  • 500g lamb mince
  • 1 teaspoon each of cinnamon, ground coriander and cumin
  • 1 handful of fresh mint, diced
  • 1 handful of fresh parsley, diced
  • Approx 400g brown rice
  • Half a pomegranate, seeds removed
  • Half a cucumber, grated
  • 4 tablespoons of Greek yoghurt

How To Make It

  • Step 1.

    Heat the oven to 180C. In a large bowl mix together the peppers, shallot, 2 of the 3 garlic cloves, mince, cinnamon, ground coriander and cumin.
  • Step 2.

    Add in half of the fresh parsley and mint then with your hands shape into golf-sized balls.
  • Step 3.

    Cook in the oven for 20 minutes, turning once.
  • Step 4.

    Whilst the koftas cook, make your brown rice according to the packet instructions.
  • Step 5.

    For the tzatziki mix together the grated cucumber, remaining garlic clove and yoghurt.
  • Step 6.

    Serve the rice on a plate, top with the tzatziki and a few of the koftas. Then sprinkle the pomegranate and remaining mint and parsley over the top. Puree or mash for babies, using a little more tzatziki to bind it all together.
