Kid-Friendly Prawn Aglio e Oglio

Back in the days before kids I'd pack this, one of my favourite dishes, with loads of fresh red chilli but now, not possible. My eldest can however probably give Bubba Shrimp a run for his money when it comes to eating prawns so I thought I'd do a kid-friendly aglio e oglio. No chilli but loads of garlic, and some extra veg.

Ingredients

  • 400g spaghetti
  • 1 onion, grated
  • 1 courgette, grated
  • 5-6 cloves of garlic
  • 300g prawns
  • 1 knob of butter
  • Juice of 1 lemon
  • 60g parmesan, grated

How To Make It

  • Step 1.

    Boil spaghetti according to packet instructions and keep a few tablespoons of the water when you drain it.
  • Step 2.

    Dice an onion, season and cook on a low heat for 3 mins. Grate 1 courgette and 4-5 garlic cloves and add to the pan. Cook for 2-3 mins then remove.
  • Step 3.

    Into the same pan put the prawns with another clove of garlic and the juice of a lemon.
  • Step 4.

    Add a knob of butter, cook till prawns are pink then add the courgette mix and drained spaghetti along with the kept pasta water. Add the grated parmesan, stir and serve.

Nutritional Info

Prawns make such great finger food for little ones, and they’re a fantastically healthy food for them to get into. The courgette is optional but any veg would work well here.
