Hazelnut & Apple Scallops, Caramelised Apple & Burnt Butter Puree

If you're looking for something a little special how about these scallops as a starter. Its a lovely combo of different flavours and textures that go so well together.

Ingredients

  • 3 cooking apples
  • 2 knobs of butter
  • 1 tablespoon of brown sugar
  • 1 lemon
  • 1 handful of hazelnuts
  • Approx 3-4 scallops per person

How To Make It

  • Step 1.

    Dice the three apples and cook in a pan along with half of the butter, sugar and juice of one lemon.
  • Step 2.

    Cook for approx 5 minutes then remove from the heat.
  • Step 3.

    Separate 2-3 tablespoons of the apples and set aside. Mash the remaining apples with a fork or masher.
  • Step 4.

    Add the second knob of butter and hazelnuts back to the pan and cook on a high heat for 2 minutes.
  • Step 5.

    Then add the scallops and cook for 2 minutes per side. Add the separated apple cubes back in to the pan.
  • Step 6.

    Spread the apple puree on a plate then place the scallops, hazelnuts and apple cubes on each plate. Drizzle the remaining sauce over the scallops and top with some grated hazelnut.
