Halloumi Fries with a Lemon, Mint and Yoghurt Dip

A ridiculously easy quick snack or side dish, great finger food for babies too. The dipping yoghurt adds a lovely zing to the dish.

Ingredients

  • Around 400g halloumi
  • 100g flour
  • 100g panko breadcrumbs
  • 100g Greek Yoghurt
  • Zest of 1 lemon
  • A handful of fresh mint
  • Olive oil

How To Make It

  • Step 1.

    Cut the halloumi into finger-sized pieces and arrange the flour and breadcrumbs in two bowls.
  • Step 2.

    Heat a pan with a little oil and wait until it’s hot. Dip the halloumi in flour first then breadcrumbs then cook for a few minutes each side. Remove and place on kitchen roll.
  • Step 3.

    Meanwhile, whip together the yoghurt, lemon zest and mint and use as a dip for the fries

Nutritional Info

Halloumi is a good source of calcium, protein and some B vitamins. There’s also some great calcium and protein in the Greek Yoghurt too
