Greek Salad with Rosemary grilled Chicken
I think a Greek Salad is the best salad out there, no doubt. I love the fresh tomatoes, salty feta, juicy olives. It’s just perfect. I’m rounding this off with some lemon and rosemary grilled chicken to make it more of a fuller meal.

- 2 chicken breasts
- Juice of 1 lemon
- 1 onion
- 1 cucumber
- 8-12 tomatoes
- 60g black olives
- 1 avocado
- 180g feta
- Fresh oregano and rosemary
How To Make It
Step 1.Slice the chicken breasts in half width-ways, season with lemon juice and grill for approx. 15 minutes, turning once.
Step 2.Dice an onion and mix with thickly cut cucumber and tomato ( i always use twice as much tomato as cucumber ), add black olives, diced avocado, crumbled feta and season with salt, half the juice of a lemon, oregano and rosemary.
Step 3.Slice the chicken and either mix in to the salad or serve on the side with some fresh rosemary.
Serve & Enjoy
Loads of vitamins in the tomatoes, avocado and cucumber plus calcium from the feta and protein from the chicken.
