Cod, potato, cheese and pea mini cakes

These cod cakes are great for a weaning baby, but they are also a delicious family snack, or snaffled straight from the fridge cold the next day!

Ingredients

  • 3-4 mashed potatoes
  • 2 fillets of cod
  • 150-200ml milk
  • 60g peas
  • 100g grated cheese
  • 160g panko breadcrumbs
  • 2 whisked eggs

How To Make It

  • Step 1.

    Peel, slice, boil up then mash 3-4 potatoes
  • Step 2.

    Poach two fillets of cod in the little milk for around 8-10 minutes, flake then add to the mashed potatoes.
  • Step 3.

    Add the peas, grated cheese, half of breadcrumbs and a whisked egg.
  • Step 4.

    Form into balls. Place the remaining egg and breadcrumbs in different bowls and roll each ball in first the egg then breadcrumbs.
  • Step 5.

    Lightly fry each ball for a few minutes each side.
