Cheesy Pasta and Shredded Chicken Traybake

A really cheesy, chewy, tasty traybake packed full of chicken, pasta, veg, fresh tomatoes and mozzarella. I'm shredding the chicken as everything then gets all cheesy and mixed together, and its easier for little ones to eat.

Ingredients

  • 3 chicken breasts
  • 2 tomatoes
  • 2 green peppers
  • 1 courgette
  • 1 onion
  • A tablespoon of dried oregano
  • A tablespoon of dried basil
  • 2 x 400g canned tomatoes
  • 360g rigatoni pasta
  • 100ml chicken stock
  • 100g grated cheddar
  • 100g grated mozzarella

How To Make It

  • Step 1.

    Start off by frying or roasting the chicken breasts then shred when cooked.
  • Step 2.

    Dice the tomatoes, peppers, courgette and an onion and fry along with some dried oregano and basil.
  • Step 3.

    Then pour over the canned tomatoes.
  • Step 4.

    Whilst you're doing all of that, cook some rigatoni 90% done.
  • Step 5.

    Stir the sauce with the pasta, veg and chicken then add in the chicken stock.
  • Step 6.

    Arrange in a tray and cover with some grated cheddar and mozzarella.
  • Step 7.

    Bake at 180 until the cheese goes nice and dark.
