Cheese Shortbreads

Ingredients

  • 100g grated cheese
  • 150g self-raising flour
  • 100g salted butter

How To Make It

  • Step 1.

    Preheat the oven to 200°C (fan) and line a baking tray with parchment.
  • Step 2.

    In the mixing bowl, crumble 75g grated cheese with your fingers to make it as fine as possible. Remove 25g and set to one side.
  • Step 3.

    Add 150g self-raising flour, followed by 100g cubed, salted butter into the remaining cheese, then bring it together with your fingers until a dough is formed.
  • Step 4.

    Tip the dough out onto a lightly floured surface and roll it out with a roller to a thickness of about 5mm, then cut out rounds using a round cutter or the top of a glass.
  • Step 5.

    Place onto the baking tray, then sprinkle each biscuit using the remaining 25g of crumbled cheese.
  • Step 6.

    Bake for 10-12 minutes until golden, then allow to cool before serving.
