Cauliflower mash, chorizo, creamy mushroom, spinach and garlic sauce

This was seriously tasty and a great dish to make if you're running down the fridge and have a limp looking cauliflower to use. Plus the mash is a great puree for weaning.

Ingredients

  • 1 cauliflower head
  • 1 spoonful of butter
  • A splash of milk
  • 4 chorizo sausages
  • 1 diced onion
  • 2 cloves of garlic
  • 8-10 chestnut mushrooms
  • 2 handfuls of spinach

How To Make It

  • Step 1.

    Boil the cauliflower then drain and blitz along with a spoonful of butter and a splash of milk. (If weaning keep a few florets for finger food).
  • Step 2.

    Cut the chorizo sausages in half lengthways and cook in a pan for 8-10 minutes, turning once. Remove from the pan and get rid of the excess oil.
  • Step 3.

    Then in the same pan cook a diced onion and two cloves of garlic. Add a good handful of sliced mushrooms and a splash of milk. Follow up with two handfuls of spinach.
  • Step 4.

    Cauli mash on a plate followed by the mushrooms and spinach.
  • Step 5.

    Top with chorizo then drizzle the sauce from the pan over the sausages.

Cauliflower is such a great superfood we should all be eating more if it, and its especially great as a mash instead of starchy potatoes. There’s a load of vitamins (specifically Vitamin C) plus calcium and iron inside.
