Cauliflower, Courgette and Cheese Bites
Packed with lots of healthy veg, these wholegrain bites are delicious and so moreish! Dial down the pepper if you want, but I love the little bit of heat it gives you.

Ingredients
- One head of cauliflower, cut into florets
- 2 courgettes
- 100g parmesan cheese
- 1 teaspoon of cayenne pepper
- 2 eggs
- 225g wholegrain self-raising flour
How To Make It
Step 1.
Set the oven to 180C. Whizz the cauliflower florets in a food processor then squeeze out the water. Grate the courgettes, squeeze the water out too and add to the cauliflowerStep 2.
Add the parmesan, cayenne pepper and eggs, mix well with your hands.Step 3.
Sieve over the flour then mix again. Shape into balls and place on baking paper.Step 4.
Cook for 40 mins and allow to cool before eating.
