Cauliflower, Courgette and Cheese Bites

Packed with lots of healthy veg, these wholegrain bites are delicious and so moreish! Dial down the pepper if you want, but I love the little bit of heat it gives you.

Ingredients

  • One head of cauliflower, cut into florets
  • 2 courgettes
  • 100g parmesan cheese
  • 1 teaspoon of cayenne pepper
  • 2 eggs
  • 225g wholegrain self-raising flour

How To Make It

  • Step 1.

    Set the oven to 180C. Whizz the cauliflower florets in a food processor then squeeze out the water. Grate the courgettes, squeeze the water out too and add to the cauliflower
  • Step 2.

    Add the parmesan, cayenne pepper and eggs, mix well with your hands.
  • Step 3.

    Sieve over the flour then mix again. Shape into balls and place on baking paper.
  • Step 4.

    Cook for 40 mins and allow to cool before eating.
