Butternut squash, apple, sultana and cinnamon scones

Ingredients

  • Half a butternut squash
  • 1 apple
  • 2 eggs
  • 30g melted butter
  • Splash of vanilla essence
  • 4 teaspoons of maple syrup
  • 250g wholemeal self-raising flour
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 60g sultanas
  • 60g oats

How To Make It

  • Step 1.

    Take half a butternut squash, peel and cube it, then steam for about 10 mins. Chop up an apple then blend both together to a puree.
  • Step 2.

    Add to that 2 eggs, 30g melted butter, a splash of vanilla essence and 4 teaspoons of maple syrup. Mix.
  • Step 3.

    In a separate bowl mix 250g wholemeal self-raising flour, 2 teaspoons baking powder and a tablespoon of cinnamon.
  • Step 4.

    Pour the wet bowl into the dry, mix well then add about 60g each of raisins/sultanas and oats. Mix then spoon into a greased muffin tray.
  • Step 5.

    Bake at 180 for around 18-20 mins until cooked all the way through. That's it!
