Butternut squash, apple, sultana and cinnamon scones

Ingredients
- Half a butternut squash
- 1 apple
- 2 eggs
- 30g melted butter
- Splash of vanilla essence
- 4 teaspoons of maple syrup
- 250g wholemeal self-raising flour
- 2 teaspoons baking powder
- 1 tablespoon cinnamon
- 60g sultanas
- 60g oats
How To Make It
Step 1.
Take half a butternut squash, peel and cube it, then steam for about 10 mins. Chop up an apple then blend both together to a puree.Step 2.
Add to that 2 eggs, 30g melted butter, a splash of vanilla essence and 4 teaspoons of maple syrup. Mix.Step 3.
In a separate bowl mix 250g wholemeal self-raising flour, 2 teaspoons baking powder and a tablespoon of cinnamon.Step 4.
Pour the wet bowl into the dry, mix well then add about 60g each of raisins/sultanas and oats. Mix then spoon into a greased muffin tray.Step 5.
Bake at 180 for around 18-20 mins until cooked all the way through. That's it!
