Bacon, Cheese and Pea Croquettes

Creamy, oozy and cheesy croquettes these are great finger food for baby and make a great post nursery or school snack. They’re also pretty tasty for adults too! The key to this is having cooled mashed potato from the start, so make sure you take the time to do this.

Ingredients

  • 500g mashed potato, cooled
  • 6 rashers of bacon, cooked and diced
  • 100g peas
  • 1 teaspoon of dried sage
  • 60g of cheddar cut into little blocks
  • A few tablespoons of white flour
  • 3 eggs, whisked
  • 100g panko breadcrumbs
  • 2 tablespoons of tomato puree
  • 50ml water

How To Make It

  • Step 1.

    Set the oven to 180. Mix together in a bowl the cooled mashed potato, bacon, peas and sage.
  • Step 2.

    Place the flour, whisked egg and breadcrumbs in three separate shallow bowls
  • Step 3.

    Take a handful of the croquettes mix and shape into a log shape, around 5-7cm long
  • Step 4.

    Dip each croquette in the flour, then egg then breadcrumb mix ensuring all surfaces are covered each time. Place on a baking tray
  • Step 5.

    Cook for 15 minutes until the breadcrumbs are crispy and the croquettes are piping hot throughout.
  • Step 6.

    For the dipping sauce mix the tomato puree with the water.

Whilst I wouldn’t advise eating all 16 in 1 sitting there’s still a good amount of vitamins and nutrients in here from the potato, cheese and peas!
