Bacon and lentil quick stew
If you have leftover bacon from the weekend (I know right, but apparently it can happen) and you want to get dinner sorted may I suggest this little easy French dish? Bacon, lentils, celery, garlic and onion is not so much a match made in heaven but a love affair.
- 6-8 rashers of bacon
- 1 onion
- 2 cloves of garlic
- 2 sticks of celery
- 1 teaspoon of dried or fresh thyme
- 2 x 400g cooked green lentils
- 100ml chicken stock
- 1 tablespoon of cider vinegar
- Fresh chopped parsley
How To Make It
Step 1.Cook your bacon as you prefer then set aside and dice.
Step 2.Cut an onion and cook in a tablespoon of olive oil then add 2 cloves of garlic, grated, diced celery and a teaspoon of dried or fresh thyme. Cook for a few mins.
Step 3.Add 2 cans of drained green lentils and cook for another minute. Add 100ml stock and the bacon then cook for 4-5 mins until most of the stock is absorbed. Add a splash of the vinegar and serve with chopped parsley. Done, done and done.
Serve & Enjoy
